Pasta with Peas - ingredients
3/4 lb pasta of your choice
3 strips of thick cut bacon cut into 1/2 inch pieces
1/2 yellow onion diced
1 qt of fresh green peas (aka English peas, hull peas), hulled
1/4 tsp black pepper
1/4 tsp nutmeg
6-8 basil leaves
1/2 cup half and half or whole milk
parmesian cheese (slivers of good parmegiano reggiano if you've got it)
Pasta with Peas - spices
Bring 5 qts of salted water to a boil for pasta. Boil pasta until al dente, most likely about 12 minutes. When done, drain pasta reserving about a cup of pasta water.
While pasta is cooking, heat large skillet over medium high heat. Add bacon and onion to pan. Saute until onions begin to brown and bacon is cooked, about 10-15 minutes. Add peas and saute for another 3 minutes. Add pasta to skillet and toss to combine. Add black pepper, nutmeg and basil leaves, stirring in. Add half and half or whole milk and cook for another 3-4 minutes, stirring constantly until it gets slightly thickened.
Server immediately with parmesian cheese over top.
