16 large cooked shrimp deveined with tails on
1/2 cup panko breadcrumbs
1 handful of fresh parsley chopped fine
1/2 cup chopped pecans (somewhat fine)
1/2 cup flour
1 tsp kosher salt
fresh ground pepper
1 egg
1/2 cup milk
2 T olive oil
Mix flour with salt and pepper in one bowl
Slightly beat egg and add milk into a second bowl
Combine panko, pecans and parsley in a third bowl
Dredge each shrimp in flour, coat in egg/milk mixture, then coat in breadcrumb mixture, while holding tail
Saute the shrimp in olive oil in a large skillet over med high heat, about 4 minutes on each side or until golden brown and delicious
This recipe seems like it would go well with some sort of (ginger | wasabe | avocado) ranch dressing drizzle.
Would make a good appetizer for 4.
