Spinach Leek Mashed Potatoes

10-12 small/medium Red Bliss Potatoes, cut into chunks
2 T butter
1 medium or 1/2 large leek, chopped into 1/4" wide 1/4-round pieces
2 cloves garlic minced
1 t white pepper
1 t salt
4-5 large handfuls of fresh spinach, stems removed, chopped
2 T sour cream
2 T heavy cream
2 T butter
1/4 c grated parmesan cheese

Boil potatoes in salted water until tender

Heat 2 T butter in saucepan, saute leeks and garlic with white pepper and salt
Add spinach to saucepan to wilt for 2-3 minutes

Drain potatoes and put in mixer, add contents of saucepan (leeks, garlic, spinach, butter, spices), add remaining ingredients (sour cream, cream, butter, cheese), run mixer on low for 5 minutes scraping down sides occasionally

Serves 6
